Spreading the "Haft-e-Sin" tablecloth is one of our beautiful and ancient Iranian customs, and doing so is so ingrained in our minds that most people think that if they do not have a Haft-e-Sin tablecloth, even if it is not simple, it will not be the New Year!

Throwing green Haftsin is one of the special rituals of Nowruz and it must be prepared a few days before the delivery of the year. Different types of seeds and edible seeds can be used for planting Nowruz greens, but the soaking time of these seeds and seeds and also the time required for their germination are different. In the following, we will introduce you to "planting different types of Eid greens" and give a brief explanation about each of them. Stay with us.

Seeds suitable for planting all kinds of Eid greens:

You can use the seeds of various vegetables to plant all kinds of Eid greens. Some lentils, mung beans or wheat that can be found in every home.

In the case of Eid greens, the cheapness of the prepared seeds is important, especially when we want to plant greens on several plates or trays. Wheat and barley seeds are cheaper than other seeds. Remember that such seeds must be healthy and fresh. If you keep them at home for a few years, they will lose their growth potential and will not grow green.

How to grow green:

For a plate of greens, about fifty to one hundred grams of the desired seed is enough.
The seeds should be soaked in water.
After overnight soaking, wrap them in a damp cloth and place them on a plate.
The plate in which this cloth is placed should not be filled with water, you should just wet the cloth regularly so that enough moisture reaches the seeds.
During this time, pour some water on the fabric every day and protect the seeds from light with a cloth.
If you forget to spray water, the seeds will have problems and will not germinate.
Despite sufficient moisture and absolute darkness, the seeds germinate gradually.
When the seeds germinate, pour them into a hollow plate and flatten them by hand so that they do not pile up; But still put cloths on the plate for a day and night, pour a little water on the plate and keep the cloth wet.
The next day, remove the cloth and place the plate in a bright, sunny place.
Gradually the greens turn green and grow. Water them regularly during this time.
Each time you water, drain the excess water that has accumulated under the plate and give it fresh water.
Try not to collect too much water on the bottom of the plate as it will cause the greens to rot.
In the sun, greens grow rapidly.
If you want to keep the green until the thirteenth of Nowruz or the thirteenth of Badr; It is best not to let the greens grow too fast. It can be placed in a cool place for the grass to grow gradually. Cold prevents the green from growing fast.

To grow wheatgrass, which is one of the most popular types of greens, first soak a handful of wheat, one overnight; Change the juice several times so that it does not become sour.
After the sprouts are a little too small, keep them in a damp cotton cloth until the sprouts come out and the tip is slightly green.
Wet the napkin regularly with a damp spray.
Then pour clean and washed sand on the bottom of the desired container and transfer the buds to the container.
Spray water on the grass 1-2 times a day.
Be careful not to water so much that if you hold the container tilted, water will collect next to the container. This prevents the green roots of the wheat from rotting.

2-3 weeks before Eid, pour some lentils in a bowl and fill it with water and let it stay at room temperature for a few days. Lentils absorb water, check every day to make sure if the lentils run out of water. Do not immerse the lentils in water, but spray water on the lentils to keep them moist.
After a few days, dampen a cloth napkin with water and place it on the lenses. Then place it near a window that has mild weather (neither hot nor cold).
Rinse the lentils daily with water (pour into a bowl of water and empty to keep the lentils fresh). Moisten the napkin daily until the lentils germinate.
Once the lentils have sprouted, transfer them to the main dish. Once the lentils are slightly green, you can remove the napkin from them. Continue to water the grass (rinse and spray water).

The pot in which you plant the seeds should have a hole at the end for water to escape so that irrigation does not cause it to rot or spoil.
Make sure that the grain spacing is neither too short nor too large.
Pour a thin layer of soil on the seeds and cover with small stones.
Wet the soil regularly with a small spray or sprinkler.
For the first two days, cover the seeds with plastic and water several times.
Try to place the pot in a sunny spot.

About a week later, your green will be about 5.6 inches high.
Do not forget to remove the plastic cap once or twice a day for about half an hour to get enough oxygen to the green, otherwise it will mold.

Tutorial for planting mung bean for Nowruz

To plant mung bean greens for Eid, you must first select the amount of seeds in proportion to the container you want (keep in mind that the amount of seeds doubles after soaking).
Soak the mung bean seeds in water overnight and the next day, completely empty the water and spread the mung beans in the desired dish in a thin layer (three millimeters).
The smaller or larger the diameter of the layer, the thinner or thicker the green will be.
Spread a layer of kitchen towels on the tongs.
Keep the surface of the napkin wet by spraying it regularly. (If spray is not available, wet your hands thoroughly and spray with water).
Keep doing this until the seeds germinate and the buds grow one centimeter tall and turn slightly green. Then remove the napkin and then spray water on the buds. Three or four times a day is enough so that the seeds are neither dry nor too much water in the container.
Continue this process until the mung bean green reaches the desired height. The growth rate of greens depends on the warmth and coldness of their storage. If it grows a lot, move it to a cooler place or vice versa to a warmer place.

Soak the seeds in water 24 hours before and change the water of the container 2 to 3 times during this period. (The type of seed does not matter) The water should be in the container until all the seeds are immersed in the water.
It is better to use pottery for the green. If porcelain is not available, it is also suitable.
Excessive watering and the use of plastic containers can cause the plant to stink.
